I started making caramels in 1978 when a family friend shared the original recipe and instructions with me over the phone. After my first batch turned out tasting more like butterscotch fudge than caramel, I used "trial and error" techniques for my subsequent batches. The results varied from crumbly fudge-like morsels to large planes of rock hard candy that had to be broken with a hammer to be enjoyed. While the flavor of these candies always got rave reviews, I only perfected the process of caramel making when I was given the best birthday gift ever—a candy thermometer! Who knew that such a little gadget would take my modest recipe from inconsistent to irresistible! I have been giving my signature caramels as gifts to family, friends, business associates, expectant mothers, and teachers for many years. The verdict was unanimous among the recipients of my edible gifts; they loved them! I was urged by my "fans" to expand my candy making hobby into a business. Upon taking their advice in 2007 and creating Bebe's Bites, my caramel selection has expanded to include an array of ingredients including chocolate, coconut, and various nuts. I hope that you will enjoy eating my delicious handmade caramels as much as I enjoy making them. Each batch is made with love, tradition, and a passion for cooking. Those are the only ingredients I can reveal, though. This is a top secret recipe that may be enjoyed by many but shared with no one!
